Whole Meal Bread Dough - No Knead

Ingredient:
  • 3 cup whole meal hi protein flour
  • pinch of salt
  • 1.5 teaspoon of instant yeast

  • 3/4 cup of soya milk (warm)

  • 1/2 cup of honey (warm)
  • 1/2 cup of water (warm)
  • 1 tablespoon of molasses sugar
  • 2 tablespoon of vegetable oil
Instruction:
1) mix flour, salt, and yeast together, then set aside.

2) warm up soya milk and water, then add the honey, molasses and canola and mix well.
3) add dry into wet by portion.

4) to create a warm temperature for proofing. heat up the rice cooker for 5 minutes, then switch off.

5) cover the bowl with plastic. place it on the rice cooker. let the dough rise to double, it takes about 3 hours.

6) flour or oil your working table. ( i prefer oil … :) punch the dough down and turn it out.
7) start shaping and DIY the dough.

8) brush rice cooker bowl with margarine as well as the dough top.
9) second proofing, warm temperature, for an hour.

10) set the bake function on rice cooker for 20 minutes.
11) let the bread cool completely before served.

this bread quite dense but very soft and gooey. compare with those light and fluffy bread, I’m more fancy on this kind of dense bread. Just because it can fill up my tummy easily and last pretty long until lunch time.


Thrilling, i can bake bread by my own NOW! I’m enjoying every single minute to bake this and that, learning from mistake, finding the solution. i feel the satisfaction, the happiness from deep in my heart. U may feel this is such a waste of time, but it isn’t to me….
