Condensed Milk Cake

Malaysian, who don't like condensed milk? Especially when we visiting Mamak Stall, the second most important ingredient to make a nice cuppa of Teh Tarik is the condensed milk. Malaysian never said no to it, me neither!


Ingredient:
  •  1 can of condensed milk (500g)
  •  4 eggs
  •  1 cup of self raising flour (140g, sifted)
  •  3 tablespoon margarine (45g, melted)
  •  1 teaspoon honey vinegar ( or pure lemon juice)


Grease the rice cooker and place parchment paper at the bottom.
Separate egg white with yolk.
Beat egg white until soft peak, honey vinegar add lastly to stabilize the egg white.
How to beat egg white
Take note: no any dust, oil, or yolk mix with egg white! Else, you couldn't beating the egg white successfully.

Using stand mixer, beat the egg yolk with condensed milk until creamy form.

 
Add the self raising flour, mix well. Do not over-mixing the flour to avoid excessive gluten form.

Lastly, add the melted margarine into the mixture, then mix well.
Pour the mixture into rice  cooker, then tab it about 5times to release the huge bubble that hiding inside the mixture....  (:
Set bake function with 30 minutes at rice cooker 
Immediately upon removing the cake from the oven invert (turn upside down) the rice cooker bowl and place on flat surface to prevent the cake from shrinking and losing its volume. 
It form a lovely dome shape, air holes in the center is super fine and delicacy. Well, the cake also have a very soft and spongy texture.
