Pineapple Upside Down Cake (Nigella Lawson)

this canned pineapple chunks been keeping for months, and i almost forget it until i saw the Nigella Lawson pineapple upside down cake recipe, then only remind me on this pineapple fruit can that full with dust now....  :)


this is the most easier cake to make, just blend all the ingredient together. Top is the sweet and sticky caramelized pineapple while base is the cottony soft yellowish butter cake. The butter cake taste salty, since i didn't added much sugar on it, merely sugar syrup from canned pineapple. But no worries, the sweetness compensate pretty well by the molasses sugar on top....   *^^*

Ingredient:
  • 140g self raising flour (1cup)
  • 1 canned pineapple chunks (dole brand, 439g)
  • 2 eggs
  • 100g margarine (daisy brand)
  • 50g molasses sugar (1/4 cup)

NOTED: the cake a tad flat and didn't rising much, just because i skip to add the 1/4 tea spoon baking soda. Kindly advice, do not eliminate it!

grease the rice cooker, and place a parchment paper at the bottom.

drain the sugar syrup out and save it for cake base.

decorate the pineapple chunks to a circular pattern. Mash the residual pineapple chunks and keep it for cake base.

 
sprinkle the molasses sugar over the pineapple.

sift the flour. (together with baking soda)

put the flour, egg, margarine, residual pineapple chunks and sugar syrup together. With stand mixer, mix until the batter is smooth.

pour this mixture over the pineapple ring, spread it gently.

set bake function at rice cooker for 30 minutes.

flip it over once it is done. let it cool, then enjoy!

    How cool! Your rice cooker can be used to bake cakes! And your cake looks lovely! I have not eaten upside down pineapple cake for ages!

    You use rice cooker to bake this cake??? I'm speechless! I love my rice cooker but never know its fullest potential until I have seen your post.

    1. Just because I didn't own any oven yet, so I fully utilize my rice cooker....haha~ but I wanna grab one soon, any good oven can recommend to me?

  4. Thea, it's such a brilliant idea to bake this cake with your rice cooker. i'm sure with the steam from the rice cooker, your cake is definitely moist and soft. Awesome!!
