Mini Durian Cupcake Muffin

我一见就钟情的食谱,这完全是fuss free,做法也非常简单。
Erm,是时候clear我冰箱里那一盒两盒的榴莲了!

Recipe adapted from Anncoo Journal with modification.

Ingredient:
  • 100ml Milk
  • 1 cup Durian Pulp
  • 80ml Grape seed Oil
  • 1 Egg
  • 50g Soft Brown Sugar 
  • 150g Self Raising Flour 

  1. Line small cupcake liners into small muffin pans.
  2. Separate 1/3 cup of durian pulp and combine together with milk.
  3. Add in oil, egg, and sugar, then whisk them well.
  4. Fold in the flour with wet ingredients until just combined. Do not over mix the batter.
  5. Spoon 1 teaspoon of batter into the muffin tin, followed by a teaspoon of durian pulp, and then cover the top with batter to almost full. 
  6. Bake in 190 Celsius for about 20 minutes or until the top have puffed up nicely.
