Gingerbread Man Cookies

上一年的Cook&Celebrate我也做了gingerbread man cookies,但比起上一个batch,这次的饼干在口感上和甜度都刚刚好。而这次的recipe是参考Kokoma出的糖霜饼干书,里面有好多精制又美丽的糖霜设计,教学方式也是图片化的,是一本值得推荐的烘焙书。

[Cookies]

Ingredients:
  • 100g salted butter
  • 40g icing sugar
  • 200g low protein flour 
  • 4tsp cinnamon 
  • 1 beaten egg (room temperature) 
Steps: 
  1. Cream the butter& sugar until pale yellowish.
  2. Whisk in beaten egg little by little to avoid curdling.
  3. Fold in sifted flour until well combine.
  4. Let the cookies dough sit in the fridge until firm (at least one hour).
  5. On lightly floured surface, using two chopsticks as a guide, roll the dough to 4mm thickness.
  6. Use a gingerbread cutter to cut out the cookies.
  7. Transfer the cookies to a cookies tray line with parchment paper, bake for about 170 Celsius in 25 minutes.

[Confectioner Frosting]

Ingredients: 
  • 200g sifted icing sugar (about 1& 1/2cup)
  • 1 egg white (room temperature)
Steps:
  1. Pour the egg white into sifted icing sugar.
  2. In an electric mixer, beat them until well combined. In conjunction, scape down the side of the bowl.
  3. Stop beating when the icing become glossy and shinny.
  4. Tint the frosting with food color, if desired. 
  5. Place the frosting into a piping bag and cut a tiny hole at the end, start decorate as you like.

Peanut Cookies

没bake过都不知道原来花生饼是那么容易做的。我是那种不爱跟recipe的baker,so这花生饼的size是特大号款的。哈哈。至于egg wash呢,我选择烘烤到一半才擦,so烘出来的表面就会光滑。
这是个人喜好,你可以选择烘烤前擦蛋汁。

Ingredient:
  • 250g all purpose flour
  • 250g ground peanut
  • 130g icing sugar 
  • 100g grape seed oil + 60g peanut butter
  • 1 beaten egg (for egg wash)
  1. mix all the dry ingredient in a large bowl.
  2. melt the peanut butter and add in the oil, and mix well.
  3. pour the wet into dry ingredient, mix until it's well combine.
  4. roll the cookies dough into your desire shape. (I'm using my tablespoon as my cookies mold, so their shape looks bigger)
  5. bake for 170 Celsius in fan mode about 20 mins,  take out the cookies, brush the egg on top, then continue to bake for about 10 mins.

"Meh Meh" CNY Cookies

回到重点。怎么做啊?

你可以用任何你习惯用的cookies recipe。但我个人觉得用German cookies dough 会比较适合,原因是它烘出来像小棉羊那样白雪,唯一的缺点是面团很soft, 做造型会有点困难,需要一直搽玉米粉在手上。还有一点需要注意的是oven temperature不能set太高, 要低温烘烤,饼干才不会出现裂横。


Ingredient you need: 
  • 90g all purpose flour (sifted)
  • 85g corn flour (sifted)
  • 125g unsalted butter (soften in room temperature)
  • 25g icing sugar 
  • chocolate chips& black sesame seeds (for decoration)
  1. cream the butter with sugar.
  2. whisk in all the dry ingredient until fully combine.
  3. start decor! spread some corn flour on your hands: 
    body- scoop around 1/2 tbspn of dough and roll it into a ball.
eye- pop in two black sesame seeds on the body.
hair- roll two little ball and place them on top, use a toothpick and 
press lightly into the centre of each dough.

     4. bake in the oven for 160 Celsius about 20 to 25 minutes. 
     5. take them out from the oven, quickly decor for ear- put two chocolate chips beside their hairs.

h0h0h0, It's Christmas Cookies Time !


 do they look adorable? (^^) i spent almost half day to bake and decorate them. my cookies base unfortunately is 能看不能吃 (taste awful!). so the whole batch of cookies just meant for Christmas tree decoration. Well, I'm not gonna to reveal my worst ever cookies recipe to you all, but i would like to share the recipe for icing. Compare to previous icing that i made last year, this is much whitish& smoother.

Ingredient that u need are

  • 1 egg white
  • 230g powder sugar 
  • 3 tspn lemon juice 
whisk the egg white until foamy. then sift in the icing sugar and stir until smooth. add the lemon juice and keep stirring until you get a smooth and glossy consistency like picture below.

For the other half of my cookies dough, i decided to bake the famous Stained Glass Cookies. i reckon it will look great under the Christmas tree lighting. 

Note:
  1. baking time must not exceed 10 minutes. other wise the candy will start bubble (like the picture above) and out from center.
  2. poke a small hole on the top of each cookies before baking, if the cookies are used for ornament.
  3. smaller the center, the color will be more significant.
