#eatclean

最近上YouTube都一直看vegan diet或是eat clean的video,搞得我都有点受影响了。原本没想要share我这普通到不行的oatmeal食谱,但它实在是太好吃了,也刚好符合这个月little thumbs up的主题,so我还是决定share我这自创的overnight oatmeal.

Here are the Ingredient:
  • 150ml soymilk (unsweetened)
  • 5 tbsp. Rolled Oat
  • 1 tbsp. Molasses (Liquid)
  • 1 tsp. Cinnamon
  • 1 medium Banana
  1. prepare and clean your favourite jar, preferable come with lid. (I'm using shaker)
  2. pour the soymilk, molasses and  rolled oat into the jar, stir until well combine.
  3. place them in the fridge until the next day.
  4. on the next day morning, heat the mixture in the microwave for about 2 minutes.
  5. slice the banana and sprinkle the cinnamon on top.

Banana Bread

(first batch-using molasses sugar, so the outcome is in darker color)
I have done thrice by adjusting the ingredient quantity, but It still didn't achieve my desire texture. This banana bread is a way too dense yet chewy for my liking, it does smell very banana-y and reminds me of cekodok pisang, but the texture... Totally Out!
Isn't because of the oat? ... Proven, not its fault.
Too much of flour? ...
Too many banana? ... 
Yogurt? ...
Taste wise, it is a nice piece of banana flavored Kuih. To make it taste even better, pair them with peanut butter or nutella spread. Well, banana+peanut butter or banana+chocolate always be the best match in dessert heaven right? ^^

(Ingredient shows in below is the best version I get among of three batch)

Wet Ingredient:
  • 4 medium banana
  • 1/4 cup oil
  • 1/4 cup yogurt (60g)
  • 1/4 cup honey
  • 2 eggs
Dry Ingredient:
  • 3/4 cup self raising flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oat

Oven: 180 Celsius for 50 minutes.

Chocolate Banana Muffin Cake

大爱这个巧克力muffin,满满的巧克力块,扎实的蛋糕,非常好咬。如果巧克力不沉底,那应该会更perfect!


Here are the ingredient:

  • 4egg 
  • 1/3cup castor sugar
  • 50g melted butter 
  • 2 Riped banana(m) 
  • 200g self raising flour 
  • 220g chopped chocolate Cadbury milk chocolate 

Chop the chocolate into your desire size (smaller is better, leave some to sprinkle on top)
Spoon 2 tspn from 200g self raising flour into the chocolate (this step can prevent the chocolate sink in bottom, btw it doesn't work for my cake, may be it works for you.)
Beat whole egg until it start foaming, then add all the sugar.
Beat them until it reach ribbon stage like the picture in below.
Add the melted butter in circular motion, then mix well.
Add the banana.
Add in the flour in three parts. Whisk them slowly and carefully to avoid the bubble deflated.
Lastly the chocolate.
Divide the batter equally into your muffin tin. 
Bake in 180celsius for 30 minutes or until the top is springy when touch.
Start drooling? ^^  

note: 
  1. sprinkle the chocolate chunk on top instead of mixing into the batter.
  2. eliminate the cupcake paper, grease the cupcake tin instead.

SoyMilk OatMeal

After seeing ellena guan posted plenty of overnight oat recipe. I'm start thinking to made some for myself. But my stomach cannot stand with chill food, especially in the morning. So I'm decided to cook the rolled oat instead of soaking it overnight. 

To avoid milk intolerance (which only happen in the morning or when I'm hungry... Hahaha. I admit I have a sensitive stomach), I'm not using milk but soy milk to cook my rolled oat. 

Regular rolled oat (less process) actually taste much better than instant oat. Once instant oat mix with water, they will start sticking together and becoming glue texture. I think this is the main reason why people don't like to eat them. So if you have the same view like I do, you may start your hearty breakfast with rolled oat first. You can cook it on the night before, chill it into the fridge. In the next morning, just spoon out the portion you want, microwave for a minute, and sprinkle your favorite topping.


Here are the ingredient: 

  • 2tbspn rolled oat (regular,not instant type) 
  • 2oo ml soy milk (no added sugar for healthy option) 

Heat both ingredient until boil or the oat become softer and larger in size.  For easier way, stop the heat once the lovely soya bean smell releasing.

No Mixer No Oven - Rice Cooker Banana Cake

I'm not baking for a decade! Not because I'm lazy, it is due to no water supply in my housing area.
Dear GOV, how long the water restriction PROGRAM going end? ...... people are Suffering!



this is an impromptu bake, without referring any website, truly "thealovetea" own Banana Cake recipe...  :)

Proud on myself! hahaha


For creaming the butter and sugar, you can use electronic hand mixer. But i want to challenge my skill and my arm strength, so I choose whisker  ... hihi ... 

Although I'm not using hand mixer, the cake still so soft and spongy, not too sweet and it smells very buttery! The only imperfect is a tad oily. I will definitely try this recipe again with less butter and add some CHOCOLATE into it!


Ingredient:
  • 100g good quality butter (recommend to reduce half, i found out my cake turns out a bit oily)
  • 50g soft brown sugar 
  • 2 eggs
  • 2 medium riped banana
  • 1 cup Self Raising flour 

Preparation:
  • make sure butter and egg in room temperature. 
Room temperature butter ----> easy to press by finger.
Faster way to bring those eggs into room temperature -----> immerse into hot water about 3mins.
  • grease the rice cooker and line with baking paper.
  • well beaten the two eggs.
  • well mashed the bananas.
  • sift the flour.
Creaming butter and sugar until it turns whitey, fluffy and double in volume.

Add the beaten eggs.

1/4 cup of flour.

Then, the natural sweetener Riped Banana! 

Lastly, add all the residual flour. Do not over mixing the batter!

Pour the batter into the rice cooker pan.
Set *CAKE* function for 25 to 30mins or until the cake springy when touch.
(I'm using Buffalo smart cooker, model:buffaloSC10, cup capacity:5cups)  

Let the cake cools completely before served.

Steam Chocolate Banana Cake

I'm a die-hard fans of chocolate banana..... Erm, i think this statement isn't true enough. I should say I'm a chocolate fans. Basically, i never skip all kind of chocolate concoction even spicy chocolate. Previously, i will buy for eating. But now, i will buy for baking...  (:
Today recipe sharing is steam cake, chocolate with banana. You can add extra chocolate like chocolate bar to intense the flavor. But i choose to make it simple, only cocoa powder used.
And this cake tend to call it as "crack" cake rather than crab cake... *^^* please read the NOTE that i share on the below. You will understand more.


Ingredient:
  • 50g (1/3cup) All Purpose Flour
  • 1 tablespoon Cocoa Powder
  • 1/2 teaspoon Baking Powder
  • 1/3 teaspoon Baking Soda
  • 2 tablespoon Margarine (melted)
  • 1 medium Banana (mashed)
  • 2 Eggs (cold)
mix all the dry ingredient together except sugar, sift well and then set aside.
melt the margarine & mash the banana.
lightly beat the cold eggs.
add the sugar little by little.
beat them together until it reached ribbon stage.
add the oil, whisk well.
next add in the flour & mashed banana. Do not over mixing the batter!
prepare your own molds & grease their surface.
steam for about 8 minutes with high heat.

NOTE:
  • remember grease your mold, or else you will get in trouble to unmold the cake and clean the mold!!!

  • bigger mold need longer steam time.
  • do not using plastic mold like what I'm do. Because it left some quirky smell on your cake.
